Catering Menu

We do everything we can to make your event uniquely yours. No need for your guests to be stuck with the boring meat and pasta options. A custom menu can be created based upon YOUR tastes. With that said, here are some choices that others have selected for wowing their guests with some culinary flair. Click on each one to learn more.

All catering packages begin at $18 per head and include use of assorted china patterns, silverware and white cloth napkins.

Chicken Chili Verde

  • Juicy boneless chicken thighs roasted in a savory Verde sauce, onions and chili peppers

Caliente Pulled Pork

  • Cumin roasted pork butt marinated in sriracha and garlic. Roasted for hours for the ever so tender goodness.

Ground Beef Casserole

  • Seasoned ground beef layered with corn tortillas, cheddar cheese, sour cream, enchilada sauce, red onions and topped with shredded lettuce, cheddar cheese and a southwest sour cream drizzle.

Salsa Roasted Chicken Breasts

  • Red salsa marinated roasted chicken breasts.

Beef Barbacoa

  • Beef round roasted in an adobe sauce and then shredded in the juices.

Side Course Choices (Choose 3, each additional option will be $2pp)

Spanish Rice

  • White rice sautéed until golden brown and then cooked slowly with tomatoes, onions and finished with green peas and cilantro.

Roasted Spanish Corn

  • Whole corn kernels roasted with red onions, bell peppers and jalapenos Tossed with a cilantro lime sauce to serve.

Cilantro Lime Rice

  • White rice tossed with a cilantro lime sauce and diced jalapenos.

Creamy Refried Beans

  • Refried beans with sour cream topped with cheddar cheese and enchilada sauce.

Fiesta Broccoli

  • Broccoli crowns roasted with jalapenos, onions, bell peppers and then tossed with a jalapeno lime sauce.

Mexican Macaroni and Cheese

  • Spiral noodles served with a chipotle cheese sauce, bell peppers, onions and shredded cheese. Topped with a southwest sour cream.

Spanish Quinoa

  • Quinoa tossed with enchilada sauce, cheddar cheese, jalapenos, onions, corn and bell peppers. Topped with a spicy sour cream drizzle.

Balsamic Roasted Portabella Mushroom and Mixed Seasonal Vegetables

  • Thick sliced portabella mushrooms, mixed bell peppers, red onions, zucchini and yellow squash roasted in a savory balsamic reduction.

Roasted Garlic Vegetable Medley (gluten free)

  • Crisp seasonal vegetables tossed with a garlic herb oil and roasted in the oven.

Couscous with Olives and Sun-dried tomatoes

  • Rich Couscous tossed olives, sundried tomatoes, black beans and parsley. Served with a garlic and shallot dressing.

Cilantro Lime Sweet Potato and Black Bean Salad

  • Golden sweet potatoes and crisp black beans tossed with a cilantro lime dressing.

Summer Corn and Edamame (gluten free)

  • Sweet summer corn, shelled edamame, cherry tomatoes, shaved red onion, basil all tossed with a sweet and savory balsamic dressing.

  • These thin sliced pork chops are covered with fresh herbs and pan seared to seal the flavor in, they are then covered in a bacon maple   cherry coulis.

Grilled Salmon with Pineapple Mango Salsa

  • Fresh cut salmon portions seared and finished in the oven. These juicy portions are served with a pineapple mango salsa.

Blackened Chicken Breasts with Honey Lemon Dressing.

We are nestled in the country just 4 miles off I-41.

From the south: Take 41/45 North. When 41 and 45 split, take 41 North. You will pass Slinger/Jackson Exit. Within 10 minutes you will come to an exit for Washington Street, otherwise known as Hwy 33, Allenton Exit. Turn West (left) onto Hwy 33 to Hwy 175. Turn North (right) and we are a mile and a half on the left.

From the north: Take 41 South to Hwy 33, Allenton Exit. Turn West (right) onto Hwy 33 to Hwy 175. Turn North (right) and we are a mile and a half on the left.
